Inspired by the classic tuna salad recipe

Ingredients:
From your pantry:
- 1-15 ounce can 8 Track Foods Blonde Chickpeas, Drained
- 2 tsp mayo (vegan mayo works too or you can use hummus)
- salt to taste
- ¼ red onion, finely diced
- 1 tsp Italian Seasoning
From your fridge:
- 1/2 lemon squeezed
- 2 stalks celery, finely chopped
- Butterhead Lettuce
Instructions:
- Fork Mash chickpeas to rough consistency (you can remove skins or just blend in to the mix) and blend in remaining ingredients
- Spoon into lettuce or pumpernickel bread
- Enjoy!
