Fork Smashed Chickpea Salad

Inspired by the  classic tuna salad recipe

Serves 2 |. Preparation: 10 min


From your pantry: 

  • 1-15 ounce can 8 Track Foods Blonde Chickpeas, Drained 
  • 2 tsp mayo (vegan mayo works too or you can use hummus) 
  • salt to taste 
  • ¼ red onion, finely diced 
  • 1 tsp Italian Seasoning 

From your fridge: 

  • 1/2 lemon squeezed 
  • 2 stalks celery, finely chopped 
  • Butterhead Lettuce  


  1. Fork Mash chickpeas to rough consistency (you can remove skins or just blend in to the mix) and blend in remaining ingredients 
  2. Spoon into lettuce or pumpernickel bread
  3. Enjoy!
