Fork Smashed Chickpea Salad

Inspired by the  classic tuna salad recipe Serves 2 |. Preparation: 10 min Ingredients:  From your pantry:  1-15 ounce can 8 Track Foods Blonde Chickpeas, Drained   2 tsp mayo (vegan mayo works too or you can use hummus)  salt to taste  ¼ red onion, finely diced  1 tsp Italian Seasoning  From your fridge:  1/2 lemon squeezed  2 stalks celery, finely chopped  Butterhead Lettuce    Instructions: Fork Mash chickpeas to rough consistency (you can remove skins or just blend in to the mix) and blend in remaining ingredients  Spoon into lettuce or pumpernickel bread Enjoy!
