Fresh Lemon Thyme Cannellini Beans

Serves: 2-3 (1/2 cup servings)
Ingredients:
1 15oz can 8 Track Foods Organic White Cannellini Beans (drained and rinsed)
Fresh Lemon Thyme Dressing:
1 Tablespoons FRESH Lemon Juice (approx. ½ lemon)
1 Tablespoon FRESH Thyme destemmed and roughly chopped (may substitute with any fresh herb, like basil or parsley)
3 Tablespoons Extra Virgin Olive Oil
½ teaspoon sugar
¼ teaspoon salt
1/8 teaspoon lemon zest (optional)
Preparation:
Step 1: In a medium bowl, whisk together dressing ingredients
Step 2: Add drained and rinsed Cannellini Beans to bowl with dressing and gently mix
Step 3: Enjoy the flavors of spring!
Suggestions: Pair with your favorite salad green, top your morning toast or mix with your favorite pasta.
