BBQ KIDNEY BEAN AND ROASTED PINEAPPLE SLIDERS Craving Summer and BBQs? Our Dark Red Kidney bean is kind of like the mom (the unsung hero). We decided to shine some sun on this beloved bean. And wow! Absolutely Delish! | Pantry Friendly | Vegan | Serves 2 INGREDIENTS 1 can 8 Track Foods Dark Red Kidney Beans (drain and pat dry) 2T BBQ sauce (pick your favorite) 1 8 oz can pineapple chunks, drained 4 Mini Buns (we used pretzel buns!) DIRECTIONS: STEP 1: Set oven to 350F. Roughly mash the kidney beans with a potato masher or back of the spoon! (good for stress relief!) Ok not too much, you do want some of the texture of the beans. Blend in the BBQ Sauce. Form into 4 sliders (slightly larger than the size of your bun!) STEP 2: On a lightly oiled sheet pan, add pineapple and sliders. Bake for 25-30 min. STEP 3: Remove sliders from pan and broil the bun and pineapple for about 5 min on HIGH STEP 4: Add slider to bun and top with Roasted Pineapple. Serve with a side of Slaw (recipe below). YUM! SERVE WITH RED CABBAGE AND CARROT SLAW Thinly slice ½ head Red Cabbage and grate carrots (use a potato peeler) to get slices. Toss with 1-2 Tablespoons Apple Cider Vinegar.
