This weekend I decided to experiment. After playing with several variations, I came up with the perfect combination of sweetness and dark chocolate bitterness without any bean flavor. I even gave it to my son and he had no idea!
Preparation Time: 15 minutes + Bake: About 15 min = Total time 30 min
Makes about 9 brownies
From your Pantry:
- 1 can Classic Black Beans drained and rinsed
- ½ cup oats
- ½ tsp baking powder
- 2 Tbs cocoa powder
- ¼ tsp salt
- 1/3 cup maple syrup
- 2 Tbs sugar
- ¼ cup coconut oil
- 2 tsp vanilla
- ½ bar of dark chocolate, broken into pieces
Instructions:
- Preheat oven to 350F. Grease 8x8 pan
- Combine all ingredients in food processor (except chocolate bar)
- Mix until well blended – this can take about 10 min
- If you need to save time, use oat flour (see tips to make your own)
- Fold in dark chocolate chunks and sprinkle a few pieces on the on the top
- Bake in for 14-16 minutes
- Cool and serve slightly warm
Food Science Tip: Grind oats in coffee grinder to save time on blending and give you a smoother finished texture.
